It’s still got the rum, mint, and lime that makes mojitos so beloved, but with coconut milk and pomegranate arils for a magical holly-berries-on-snow effect. The result: a delicious, festive, best-of-both-worlds drink that will quickly become your new Christmas go-to.

White Christmas Mojito
Prep time: 10 minutes
Yields: 4 servings
Ingredients:
- 3/4 cup of lime juice
- 1/4 cup of packed mint leaves, plus more for garnish
- 1/2 cup of sugar
1/2 cup of white rum - 1/2 cup of coconut rum
- 1 cup of canned coconut milk
- sparkling water
- pomegranate arils
Instructions:
- In a larger pitcher, muddle the mint leaves in the sugar and lime juice.
- Using a strainer, remove the muddled mint leaves (optional).
- Fill four glasses halfway full with ice and fill 3/4 full with coconut rum mixture.
- Top off each glass with sparkling water. Garnish with mint leaves and pomegranate arils and enjoy!

We made this together last night and it was really good!
We got the canned coconut milk but I guess we didn’t shake it well enough because there were bits of unmelted coconut in the drink.
Definitely gonna try again, but overall it was a delicious drink.
