Right. Even better: adding cookies into the mix! This ice cream sandwich recipe features homemade funfetti cookies; they&#8217;re festive, delicious, and filled with <a href=\"https:\/\/www.lulus.com\/blog\/beauty\/reverse-french-nails-rainbow\/\">rainbow<\/a> sprinkles&#8211;because, well, who doesn\u2019t love sprinkles?<\/p>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-241537 size-full\" src=\"https:\/\/www.lulus.com\/blog\/wp-content\/uploads\/2020\/08\/funfetti-cookie-ice-cream-sandwiches-0818.jpg\" alt=\"finished ice cream cookie sandwiches\" width=\"1000\" height=\"1500\" \/>\n<p>The trick to this cookie sandwich is using real ice cream. No-churn homemade ice cream doesn\u2019t work as well in an ice cream sandwich recipe, because it just melts faster than regular ice cream. The other trick to these is having <a href=\"https:\/\/www.lulus.com\/blog\/recipes\/pantry-staples-almond-butter-chocolate-chip-cookies\/\">cookies<\/a> that are just a <em>tad<\/em> underbaked! I opted for a classic: vanilla bean ice cream! But you could, of course, sub in <a href=\"https:\/\/www.lulus.com\/blog\/beauty\/strawberry-nail-art\/\">Strawberry<\/a>, Chocolate, Butter Pecan, Chocolate Chip, Cherry (my husband\u2019s favorite!), or really any flavor that you love.
