Warm and Cozy Banana Bread Recipe

This time of year means crisp mornings, early sunsets, and the classic I-slept-through-my-alarm-and-must-run-like-the-wind-to-class/work/yoga struggle. I get it. Which is why baking a loaf of this banana bread on a lazy Sunday can be the perfect thing for slicing up and tossing in your bag before you head out the door mid-week. This is also the perfect way to use up any too-ripe bananas because the spottier they are, the sweeter and more delicious this loaf becomes. Plus, there is just nothing like the scent of banana bread baking in the oven. Cozy up, slip into something flannel, and embrace the season with a good old-fashioned bake fest.

For the bread:

1 3/4 C all-purpose flour

1 1/2 tsp baking soda

3/4 tsp pink salt

1/8 tsp nutmeg

3 large eggs, room temp

1 1/2 C granulated sugar

2  large ripe bananas, mashed

3/4 C melted coconut oil

1 tsp vanilla extract

Set oven to 350 degrees and coat a bread loaf pan with non-stick coconut oil spray before mixing together the dry ingredients. In a bowl, combine the flour, baking soda, salt, and nutmeg. The nutmeg is totally optional, but it’s what takes this bread to the next level and just smells like your mom’s baking. In a separate bowl, whisk together the eggs, sugar, mashed bananas, coconut oil, and vanilla extract. Lick the spoon (seriously!). Not only is it totally irresistible, but tasting your batter will remind you if you forgot something key like sugar, salt, or ya know, bananas. A delicious batter almost always means a delicious end product. Slowly add the dry ingredients to the wet, mixing until just combined, before pouring your batter into a greased baking dish.  Bake for about 55-65 minutes (test with a toothpick – it’s done when it comes out clean), remove from the oven, and let it cool before serving.

This bread is amazing on its own, but it’s also perfect served a little warm and topped with peanut butter. Go crazy. I promise, this one will be your baking go-to from here on out!
