I know it’s not just me holding on to the final days of summer-like temps (although sweater and boot season is seriously calling, and I’m not even a little mad about it). This is the time to raid your local farmer’s markets and grocery stores for these two end-of-summer staples: tomatoes and stone fruits! I’m talking heirlooms, peaches, nectarines, cherry tomatoes… Grab them all, because they are the basis of this entirely fresh and delicious salad that simply won’t be the same any other time of year.

For the salad:

Sliced heirloom tomatoes

Sliced cherry tomatoes

1 sliced peach

1 sliced nectarine

1 bundle of arugula

1 bunch of basil

1 8 oz. package goat cheese

Simple dressing:

1 part white wine vinegar

2 parts olive oil

Coarse sea salt and pepper

A drizzle of honey

Evenly slice up all your farmer’s market goodies into big, juicy, bite-sized pieces. Toss them in a giant bowl of arugula and basil before whipping up this super simple dressing. Keeping the dressing light and clean lets the fresh, peak-of-season fruits shine through. For the dressing, simply whisk the vinegar, olive oil, salt, and pepper, and pour generously over your entire salad. Dish up, and then drizzle with a little bit of raw, organic honey before finishing it all off with another sprinkle of your salt. You don’t need much to enhance the natural flavors going on here. Top with your favorite creamy goat cheese (think a late summer’s eve, fruity take on your classic Caprese salad) and dive in. This dish works great on its own, or as a side to your favorite protein. Trust me, you’ll have plenty of time for pumpkin spiced everything, so enjoy this last taste of summer while you can!
