Thanksgiving is quickly approaching! Every year I look forward to all the dishes that will grace our Thanksgiving table, like the cranberry sauce and the pie, well, pie(s)–because how can anyone choose between Caramel Apple, Pumpkin, and Chocolate Bourbon Pecan? Something else I love about the holiday: turning my favorite foods from the feast into Thanksgiving leftover recipes.
My mom’s homemade stuffing is one of the dishes I look forward to eating the most–seriously, it is SO good. And if it’s good on the first day, imagine how good stuffing made into waffles (yes, waffles) will be the day after Thanksgiving. Or maybe three days later, when you’re still drowning in leftovers but getting bored of eating the same thing.
Crisp and golden, these waffles are a perfect vehicle for any leftover gravy or cranberry sauce. But let’s be honest: You all know that I’m topping my waffles with gravy, cranberry sauce, butter, and maple syrup. This is, after all, the super bowl of food–and I’m in it to win it.
Note: You can easily scale this recipe up or down to accommodate the amount of stuffing you have remaining! You can also buy boxed stuffing mixes and make the waffles from that. Just prepare the stuffing as it says on the box, then proceed with the recipe directions below!
