It’s fall, and everyone is going crazy for all things pumpkin–but let’s not forget all the delicious ways that we can use apples! They’re incredibly versatile and absolutely deserve a place among all the pumpkin spice foods we see everywhere this time of year.

I’m starting my fall baking off with an apple streusel coffee cake–on National Coffee Day, no less! This apple crumble cake is simple to make–you don’t even have to get out your mixer! Everyone who’s tasted this recipe agrees that it’s the perfect fall treat. The cake is moist and flavorful, the apples are tender, and the streusel on top gives the perfect crunch.

Oh, and don’t forget the glaze! It ties all the components of the apple cake together and finishes off this treat so beautifully. The glaze has maple syrup, apple cider, and butter, so you know it’s a winner!

Ingredients

For the Apple Filling:

3 tbsp salted butter

2 medium tart apples (such as Granny Smith), peeled and thinly sliced

2 tbsp brown sugar

¼ tsp cinnamon

For the Cake:

1 and ½ cup all-purpose flour

½ cup granulated sugar

¼ cup brown sugar

½ tsp baking powder

¼ tsp baking soda

½ tsp salt

¼ tsp cinnamon

¼ cup salted butter, melted

1 egg

½ cup buttermilk

1 tsp vanilla

 

For the Streusel:

1 ½  cups all-purpose flour

⅔ cup brown sugar, packed

1 tbsp raw cane sugar

¾ tsp cinnamon

¼ tsp nutmeg

⅛ tsp ground cloves

½ tsp salt

1 stick salted butter, melted

1 tsp vanilla

For the Glaze:

2 tbsp salted butter, melted

1 tbsp real maple syrup

1 ¼ cup powdered sugar

1 tbsp apple cider

1 tsp vanilla

Pinch of salt

¼ tsp cinnamon

 

Directions

Prep:

Grease a 9-inch round or square pan well or line it with parchment paper. Pre-heat your oven to 350 degrees F.

For the Apple Filling:

In a medium pan, melt the butter. Add apples and cinnamon and saute over medium heat for about 5 mins, until somewhat tender. Add the brown sugar and cook over low heat for one minute more, while stirring. Remove from heat and set aside.

For the Cake:

Whisk the dry ingredients together in a large mixing bowl. Pour in the melted butter, and stir into the dry ingredients with a fork until you have a lumpy mixture. Next, beat the egg in a small dish. Add the beaten egg, buttermilk, and vanilla to the mixing bowl and stir until just combined – the batter should be lumpy.

For the Streusel:

Whisk together dry ingredients. Stir in the melted butter and vanilla. You should have a crumbly mixture.

Assemble:

Pour half the batter into prepared pan. Add the apples and half of the streusel. Spoon the remaining batter over the top, and gently smooth it out with the back of a spoon. Add the remaining streusel.

Bake for 32-35 minutes. The streusel on top will be lightly browned and a toothpick inserted into the center of the cake will come out clean, or with some moist crumbs on it – not with wet batter.

While the cake bakes, make the glaze.

Glaze:

Melt the butter. Whisk in the remaining ingredients. Add a little more apple cider or powdered sugar to thin or thicken the glaze to your desired texture. Once the cake is done, pour the glaze on top and enjoy immediately!

Store leftovers, covered, at room temp for 1-2 days or in the fridge for 4-5 days.
