Spring and summer just feel like brunch seasons, right? The warm weather is beckoning us to sit outside and enjoy a meal on the patio, and Father’s Day is right around the corner–both perfect brunching occasions. Not to mention, the ideal excuse to try this Strawberry French Toast Bake recipe. Of course, is there any day that sounds like a bad idea? Mm, not really.
Strawberry French Toast Bake is a lovely brunch option in my opinion. It’s also pretty simple: You can assemble it the night before in about 15 minutes, using pretty basic ingredients. Cover it, pop it in the fridge, and bake it up in the morning! No, really–it’s that easy. You can also swap in whatever berries you have on hand for this French toast casserole: If you have blueberries or blackberries instead, go ahead and use those! You can also substitute non-dairy milk if you need to.
The most important part of this recipe is making sure the bread has enough time to soak up all the liquid before you bake the casserole. The second most important part is serving this dish with lots of maple syrup (naturally)!
Here’s hoping you all have a wonderful Father’s Day, whatever that may look like for you, or just a delicious brunch on any old day you choose. Scroll on to get the full French Toast Bake recipe ahead!
