Let me introduce you to the Breakfast Strata. It’s like the sister of the Overnight French Toast Bake! This brunch dish couldn’t be any easier to whip up – or more flexible! You start with a mixture of eggs, milk, salt, pepper, and garlic. Add your mix-ins! We used breakfast sausage, cheddar cheese, and spinach. You can use whatever you like or whatever you have on hand! Ham, bacon, or no meat at all would work as well. Swap in any type of cheese you like! Don’t love spinach? Omit it!
This is a smaller batch made for two, but you could absolutely double the recipe and bake it in a 9×13 pan. This is a write-your-own-adventure kind of brunch situation. With Father’s Day and summer just around the corner, we’re all in need of some brunch situations.

Prep Time: 20 mins
Cook Time: 35 mins
Overnight Resting Time: 8 – 12 hours
Yield – 6 larger or 8 smaller slices
1 tsp minced garlic
3/4 cup fresh spinach
5 eggs
1/4 milk
1/2 lbs breakfast sausage, cooked
1/2 cup cheddar cheese
8 ounces French bread, cubed
1/4 tsp Salt
Dash of Pepper
Whisk together eggs, milk, garlic, salt, pepper in a medium bowl. Add the bread, spinach, sausage, and cheese and stir well to combine all ingredients, making sure the bread gets nice and soaked. Pour mixture into a greased 8×8 pan, and cover well. Refrigerate overnight (8-12 hours).
In the morning, preheat the oven to 375 degrees F. Uncover, and bake strata for 35-40 minutes, or until the bread is a bit golden and crisp at the edges and the cheese is fully melted. Enjoy immediately!
