If you’re looking for a delicious, no-bake, low-effort summer treat, look no further! These Chocolate Covered Strawberry Graham Cracker Ice Cream Sandwiches fit all of the criteria. It takes more effort to say the name of this recipe than it does to actually make them!

When it comes to irresistible frozen treats, few things compare to the magical combination of ice cream and chocolate. But what if we took that delectable pairing to new heights? Imagine sinking your teeth into a creamy ice cream filling, nestled between two crisp and subtly sweet graham crackers.

But wait, it gets even better! These delightful ice cream sandwiches are taken to the next level as they are dipped in a velvety cloak of rich, decadent chocolate. The result? A symphony of textures and flavors that will transport you straight to dessert heaven.

Start by softening your favorite store-bought strawberry ice cream at room temp for a bit. Spread the softened ice cream into a lined sheet pan, and freeze back to solid. Then, slice it to fit your graham crackers. Sandwich the ice cream and dip in melted chocolate. Finish with a chocolate drizzle for a little extra flair, and you’re done! This is the easiest homemade ice cream sandwich recipe you’ll ever make!

Bonus: These tasty frozen treats are also customizable! Don’t love strawberry ice cream? No problem, swap in your favorite flavor–try blueberry or chocolate ice cream. Love white chocolate? Dunk ‘em in white chocolate and add a white chocolate drizzle! Feeling super ambitions? Make your own no-churn ice cream (and then be sure to invite me over, please).

No matter how you make these, they’re sure to be a hit at any summer party, picnic, or barbecue. Happy summer–and happy no-baking! Scroll on for the complete recipe!

Graham Cracker Ice Cream Sandwich:

Prep Time: 30 minutes
Yield: 12 ice cream sandwiches

Ingredients:

4 cups of strawberry ice cream (about ⅔ to ¾ of a standard 1.5 quart tub)
12 whole graham crackers
8 ounces semi-sweet or milk chocolate (chopped bars, almond bark, or chips all work)

Instructions:

  1. Line a 9×13 pan (or similar) with parchment paper. Let ice cream sit out at room temperature for a few minutes to soften.
  2. Scoop out four cups worth and spread into the prepared pan. Spread it as evenly as you can. Freeze until completely frozen again.
  3. Slice into pieces that match the size of half a graham cracker.
  4. Place each ice cream square between two graham cracker halves and place on a lined pan to freeze again.
  5. Melt chocolate in a medium bowl in the microwave, in 30-second intervals stirring between each.
  6. Dip ice cream sandwiches halfway into the chocolate, then add a chocolate drizzle on top.
  7. Enjoy! Store leftovers in an airtight container in the freezer for 2-3 weeks.
