Graham Cracker Ice Cream Sandwich:

Prep Time: 30 minutes
Yield: 12 ice cream sandwiches

Ingredients:

4 cups of strawberry ice cream (about ⅔ to ¾ of a standard 1.5 quart tub)
12 whole graham crackers
8 ounces semi-sweet or milk chocolate (chopped bars, almond bark, or chips all work)

Instructions:

  1. Line a 9×13 pan (or similar) with parchment paper. Let ice cream sit out at room temperature for a few minutes to soften.
  2. Scoop out four cups worth and spread into the prepared pan. Spread it as evenly as you can. Freeze until completely frozen again.
  3. Slice into pieces that match the size of half a graham cracker.
  4. Place each ice cream square between two graham cracker halves and place on a lined pan to freeze again.
  5. Melt chocolate in a medium bowl in the microwave, in 30-second intervals stirring between each.
  6. Dip ice cream sandwiches halfway into the chocolate, then add a chocolate drizzle on top.
  7. Enjoy! Store leftovers in an airtight container in the freezer for 2-3 weeks.
