Meet Pineapple Piña Coladas, the ultimate summer cocktail! Piña Coladas are, arguably, the quintessential vacation drink–but this time, we’re adding frozen pineapple and pineapple juice to take the classic to a whole new level of deliciousness. Here’s what you need to know to update your sunny season sip.

How to Make Piña Coladas at Home

To make these, you can use pre-frozen cubed pineapple or you can buy fresh pineapple and freeze it yourself. If you do use and freeze yourself, be sure to freeze the cubes on a sheet pan before transferring them to a freezer bag. Otherwise, the juicy pineapple will freeze into one giant chunk instead of individual pieces, making it harder to blend everything up easily.

Be sure to buy cream of coconut–not coconut cream, as they are two different things. Cream of coconut can be found in the ethnic foods aisle at most grocery stores. And, you can use whatever type of rum you like, whether it’s spiced, regular, or coconut rum.

One of my favorite tricks for serving a cold drink like this is simply to pop your glasses in the freezer for a few minutes to chill (just don’t forget them). Doing so will keep your drink cold longer, even on hot summer days. Then, garnish your drink with a skewer of fresh pineapple chunks–you can even add a cherry!

Ingredients

Ingredients:

  • 5 ounces rum
  • Juice of ½ a lime
  • ¼ cup cream of coconut
  • 1 cup pineapple juice
  • 4 and ½ cups frozen pineapple cubes
  • Fresh pineapple, optional for topping

Directions

Step 1:

Chill your glasses in the fridge or freezer for a few minutes before beginning.

Step 2:

Place all ingredients into a high-powered blender, starting with the liquids and adding the frozen pineapple last. Blend on high speed until everything is smooth and combined.

Step 3:

Pour into chilled glasses and top with skewers with pieces of fresh pineapple.  *This recipe can be scaled up or down however you like. You can even freeze the leftover drink mix (if you have any, which is doubtful!) and then scoop it and enjoy it like a frozen sorbet. It’s delicious!*
