MaplePecanMugCake

Ingredients

(Makes 1-2 servings depending on the size of mug)

  • 7 tablespoons yellow cake mix
  • 3 tablespoons softened coconut oil
  • 1/2 an egg (lightly beaten)
  • 1/4 cup chopped pecans
  • Non-stick cooking spray
  • Grade A maple syrup
  • Whipped cream
  • Brown sugar

Directions

  1. Combine cake mix, coconut oil, and egg in a bowl, mix well, then fold in chopped pecans.
  2. Spray the inside of a microwave-safe coffee mug with non-stick cooking spray, and fill 3/4 of the way full with batter.
  3. Microwave on high for 3 minutes then check the center of the cake with a toothpick. If the toothpick comes out clean then the cake is done, otherwise microwave cake in 30-second intervals until fully cooked.
  4. Let the cake cool for 1-2 minutes, then top with whipped cream, a drizzle of maple syrup, and a sprinkle of brown sugar! Serve immediately and enjoy!
