Move over Mai Tais! This Creamy Tropical Raspberry Cocktail might be our new favorite rum cocktail! We may be a few months away from taking an actual vacation but May is here and the flowers are blooming so there’s no reason not to turn your own backyard into a tropical get away!

There’s something about rum that magically transports you to another place. Maybe it’s because all of our favorite vacation cocktails – like pina coladas, mojitos and daiquiris – feature it. So when dreaming up the perfect cocktail for a staycation, rum was of course the first thing on my list. In this tropical treat, rum is mixed with fresh muddled raspberries, pineapple and lime juice and cream of coconut, giving this dreamy cocktail a silky smooth texture and rich coconut flavor. To give this drink a little spice, a generous pinch of nutmeg is added before this cocktail is shaken vigorously. Then all you do is strain it into two glasses over ice and garnish with pineapple slices and a raspberry or 2. And we wouldn’t be opposed to serving this one with a cocktail umbrella!
And just like that you have a delicious tropical cocktail that’s like an island vacation for your tastebuds. So put up a couple tiki torches, throw on some beachy music and put on your favorite vacation dress because rum is no longer reserved for tropical vacations!

Creamy Tropical Raspberry Cocktail
Prep Time: 5 minutes
Serves: 2
Ingredients
1/4 cup raspberries, plus more for garnish
1/4 oz lime juice
4 oz rum
1/4 cup cream of coconut or canned coconut milk
4 oz pineapple juice
1/2 oz simple syrup or agave
Pinch of nutmeg
Pineapple slices for garnish
Directions
Step 1
Add raspberries and lime juice to a cocktail shaker and muddle.
Step 2
Add rum, cream of coconut, pineapple juice, simple syrup and nutmeg to the cocktail shaker with ice. Shake vigorously.
Step 3
Strain into 2 glasses filled with ice. Garnish with a pineapple slice and raspberries.
