Grilling season is finally here! It feels like it’s been ages since I last broke out my grill–maybe because it has been! We officially kicked off summer with these Chili Lime Chicken Tacos the other day. And they hit. the. spot.

The marinade for these lime chicken tacos is simple. It’s just a mix of pantry staples including salt, chili powder, cumin, garlic cloves, olive oil, and lime juice! Add your chicken to this mixture and marinate it at least one hour or up to four hours. Then, grill up your chicken!

Keep your heat over medium to ensure that you’ll cook the chicken through on the inside without burning it to a crisp on the outside. Don’t worry if it does get some charring–that’s the beauty (and flavor!) that comes from grilling!

Pro tip: Cut into the thickest part of the largest piece of chicken breast to see if your chicken is done. If it’s cooked through there, there’s a good chance all the chicken is done. Next up is the really fun part: adding toppings! I love these with a corn tortilla (char them briefly on your grill!), cotija cheese, pico de gallo, and plenty of avocado.

Ingredients

For the Chicken:

  • 1 tsp salt
  • 1 Tbsp + 1 tsp chili powder
  • 1 Tbsp cumin
  • 6 cloves garlic, minced
  • ⅓ cup olive oil
  • ½ cup lime juice
  • 4 large chicken breasts

For Topping:

  • Cotija cheese
  • Pico de gallo
  • Avocado
  • Lime wedges
  • Corn tortillas

Directions

Step 1:

Mix up the marinade ingredients and add the chicken. Let marinate in the fridge at least 1 hour and up to 4 hours.

Step 2:

Grill over medium heat, starting with about 5-10 minutes per side. There will be variation in cook time here because each grill varies, and the size of the chicken breasts you buy will vary. Cut into the largest part of the largest piece of chicken to check doneness–if that part is done, the rest is likely done as well, but it doesn’t hurt to slice into each piece to check (we’re going to slice it up anyways).

Step 3:

Let the chicken rest for a few minutes with foil tented over it, once it’s done cooking. Slice and serve with any toppings you like! Store leftover chicken in the fridge in an airtight container for 5-6 days.
