Wonton wrappers might sound like a hard-to-find ingredient, but they’re actually available at most major grocery stores. And taco cups require almost no work at all: All you’re doing is cooking the meat and adding in the taco seasoning and diced tomatoes. Then, grab your muffin tin and spray it well with nonstick spray.

Prep time: 34 minutes

Serves: 16 people

Ingredients:

  • 1 lb ground beef or turkey
  • 1 packet of your favorite taco seasoning
  • One 14.5 can diced tomatoes, drained
  • Shredded cheddar cheese

Toppings:

  • Green onions
  • Sour Cream
  • Salsa

Instructions:

  1. Preheat the oven to 400 degrees F. Spray a muffin pan well with nonstick spray.
  2. Cook the meat in a skillet until browned and cooked through, breaking it up as you go. Add your favorite taco seasoning and the drained, diced tomatoes.
  3. Place one wonton wrapper into each muffin tin cavity. Place a second one on top of the first, rotating it so the corners of the top one don’t overlap the corners of the first one.
  4. Spoon the mixture into each muffin tin, and top each with a generous sprinkle of cheese.
  5. Bake for 14-16 minutes, until the cheese is melted and the wonton wrappers are crisp and browned.
  6. These are best fresh from the oven. Serve with sour cream or salsa, and top with green onions if desired. Leftovers can be stored in an airtight container in the fridge for a few days.
