
Between the start of summer and Pride Month, once June rolls around, it’s all about colorful everything–from rainbow clothes and accessories to festive food and drinks! Well, not only are these Funfetti Cookie Bars a breeze to whip up, they’re perfect if you’re looking for rainbow desserts to make for Pride.
My Funfetti Cookie Bar recipe comes with with a short (and sweet) list of super basic ingredients, and I’m willing to bet that you have most of them in your pantry right now! These bars bake up to have the perfect gooey texture inside, with a bit of crispness to the edges.
Of course, one of the most fun things about this dessert is the colorful palette–in the form of sprinkles and baking chips. Don’t hold back; really load the bars up with them! You can find rainbow baking chips like these at stores like Michael’s.

Ingredients
- 1/2 cup salted butter (1 stick, 8 tbsp, or 113 grams), softened at room temp
- 1/3 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 and 1/2 tsp vanilla extract
- 1 and 1/3 cups all-purpose flour
- 1/2 tsp baking soda
- Pinch of salt
- ¾ cup rainbow sprinkles
- 1/2 cup white or rainbow chocolate chips (Michael’s carries a rainbow variety)
Directions
Prep:
- Line a 9×9 pan with parchment paper or spray with nonstick spray.
- Preheat your oven to 350 degrees F.
Make the Bars:
- Melt the butter in a medium mixing bowl. Add brown and granulated sugar, and whisk until well combined.
- Add the egg and vanilla and whisk to combine.
- Stir in the dry ingredients, mixing until the dry streaks just disappear into the dough.
- Stir in the sprinkles and white chocolate chips last. The dough will be fairly thick, and you may need to use clean hands to help mix the last bits of four or the sprinkles in.
Bake:
- Spread the dough into your prepared pan and evenly press it in. Top with an extra handful or two of sprinkles.
- Bake for 16 to 20 minutes. The bars will look a bit underdone, and a toothpick inserted into the center will pull out some moist doughy crumbs. The bars will set up more as they cool–don’t overbake these!
Serve & Store:
- Let the bars cool for about 1 to 1 and ½ hours before serving. Enjoy warm!
- Store leftovers in an airtight container at room temp for 4-5 days.
