These cake mix cookies are the perfect festive dessert to make for St. Patrick’s Day–in green, of course! Chewy mint chocolate cookies are soft-baked and bursting with flavor. They also happen to be the absolute easiest to make.
All you need to whip up this recipe is a box of white cake mix, eggs, vegetable oil, green food coloring, mint extract, and chocolate chips. To make these cookies, mix everything up in a bowl with your mixer, stirring in the chocolate chips and last.
Yep, that’s it: It really is that simple to whip up these cookies. Chill the dough for about 20 minutes–this makes it easier to scoop. Then, roll the dough balls through powdered sugar for that beautiful crinkled look. (This step is optional–feel free to skip it if you prefer!)

Cake Mix Mint Chocolate Chip Cookies
Prep time: 39 minutes
Yields: 24 servings
Ingredients:
- 1 box white cake mix
- 2 large eggs
- ½ cup vegetable oil
- ¼ to ½ tsp mint extract (optional, and to taste)
- Green food coloring (optional)
- 1 cup chocolate chips
- ½ cup powdered sugar
Instructions:
Make the dough:
1. Add the cake mix, eggs, and oil to a medium bowl and mix together until you have a dough.
2. Mix in the mint and food coloring, then stir in the chocolate chips.
Chill the dough:
3. Cover the bowl with a clean kitchen towel and chill in the fridge for 20 minutes.
Bake the cookies:
4. Preheat your oven to 350 degrees F.
5. Portion the dough into balls 35 grams in size. Roll generously through powdered sugar to make crinkle cookies, if desired.
6. Place cookies a few inches apart on a lined baking sheet. Bake for 8-9 minutes.
Serve and store:
7. Enjoy cookies warm from the oven, or allow them to cool before enjoying. Store in an airtight container for 4-5 days, or a bit longer in the fridge.
