It’s almost that time to treat Mom to a Mother’s Day Brunch, and I’ve got you covered with this super simple Berry Croissant French Toast Bake. It’s a great recipe because it’s super low maintenance and it’s great to prep and make ahead, then bake whenever you’re ready. Which means more time to hang out and chill with Mom and the family!
Buttery, flaky croissants come together with sweet fresh berries, making for the perfect colorful recipe. Nice and caramelized on the outside but soft on the inside, this bake is a crowd favorite. Seriously, what’s not to love about it?
Garnish this with a handful of fresh berries and serve with maple syrup. The recipe pairs nicely with fresh-squeezed juice, fruit, eggs, and bacon!
Berry Croissant French Toast Bake:

Ingredients:
- 6 large eggs
- 1 1/2 cups whole milk
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 2 teaspoons vanilla extract
- About 20 small croissants, cut into cubes (reserve 5-6 croissants for the top of the French toast)
- 1 pint of blueberries
- 1 pint of raspberries
- 1 cup strawberries, hulled and sliced in half
- 2 tablespoons heavy cream
- 2 tablespoons turbinado sugar
- Maple syrup, for serving
Instructions:
- Grease a 9×13 inch-baking dish with butter or non-stick cooking spray; set aside.
- In a large bowl, whisk together eggs, milk, sugar, cinnamon, and vanilla. Add croissant cubes, blueberries and raspberries to the bowl and toss until fully coated. Pour the mixture into a baking dish. Top with remaining whole croissants and strawberries (you might need to cut a few croissants in half so that they fit on top). Cover and refrigerate for about 30 minutes or up to overnight.
- Preheat the oven to 375°F. Brush heavy cream over the tops of the croissants and sprinkle with turbinado sugar so they get extra crispy. Bake for about 45 minutes or so, depending on your oven (cover dish loosely with foil if the tops of the croissants are getting too dark).
- Serve immediately with maple syrup and additional fresh berries if desired. This recipe serves 4-6.
