Easy Peach Crisp:
Total prep and cook time: 35 minutes
Yield: 6 servings
Ingredients:
For the Crisp Topping:
1/4 cup all-purpose flour
1/4 cup brown sugar, packed
1/8 tsp salt
1/2 tsp cinnamon
1/2 cup old-fashioned whole rolled oats
1/4 cup cold salted butter, cubed
For the Peaches:
6 medium to large ripe peaches
6 tbsp brown sugar
Cinnamon
For Serving:
Vanilla ice cream
Instructions:
Make the Crisp Topping: Whisk together all ingredients except the butter in a medium bowl. Cut the butter into the dry ingredients with a pastry cutter, forks, or clean hands until you have a sandy crumbly mixture with small pieces of butter, coated in flour. Spread evenly on a parchment-lined baking sheet. Bake at 350 degrees F for 23 to 30 minutes, or until golden brown and crisp.
Grill the Peaches: Slice peaches in half and remove the pit. Sprinkle 1 tbsp of brown sugar over the two halves of each peach. Sprinkle a little cinnamon over each peach half and rub into the peach a bit. Heat your grill over medium or medium-low. Place peaches cut side down and cook for a few minutes, checking occasionally. Once peaches are warm, juicy, and have grill marks, pull them off.
Serve: Serve two peach halves per plate (or 1 if you want to stretch the yield), with a generous sprinkle of crisp topping, and a scoop of vanilla ice cream. These are best enjoyed fresh off the grill!
