Show up at Friendsgiving this year with a plate of these bacon wrapped dates stuffed with goat cheese (A.K.A. bites of heaven) and everyone will ask you when you found the time to go culinary school! Creamy goat cheese and savory bacon mixed with sweet, sugary dates makes for a complex and exquisite flavor that will rival any five-star restaurant! With three simple ingredients and thirty minutes, you’ll have a deluxe and delicious appetizer that will have absolutely everyone impressed!
Ingredients:
- 1 16 oz. package of dried Medjool Dates (can be found in the produce section of Trader Joe’s)
- 1 12 oz. package of bacon, slices cut in half widthwise
- 1 4 oz. package of Goat Cheese (Pecorino, Asiago, Manchego, Feta, or Bleu Cheese will work too)
- Toothpicks
- Paprika
- Brown Sugar (optional)
Directions:
- Preheat oven to 425°F.
- Using a small knife slice a slit in the dates lengthwise and remove pits.
- Fill each date with about a 1/2 teaspoon of cheese, depending on its size.
- Wrap dates with your half slices of bacon, securing the overlapping ends of bacon together with a toothpick.
- Arrange dates on a rimmed baking sheet and sprinkle with paprika.
- Bake the dates for about 7-8 minutes or until browned on the bottom and turn (now’s the time to add the brown sugar). Cook for another 7-8 minutes or until the bacon is cooked and a little crispy and the cheese is slightly browned.
- Let these cool for several minutes and then enjoy!
P.S. For a vegan/vegetarian version, you can use soy bacon and replace the cheese with almonds!

I’m making the dates and they have already baked for over 16 minutes on 425 and still not brown on the bottom. Are you sure these are supposed to be baked and not broiled?
Hi Donna, we baked as described in the directions, so broiling may help you achieve that crispy golden brown texture you are looking for depending on your oven.
can you make these ahead of time, then reheat when ready?
Vicki, we recommend making them fresh to enjoy the bacon and cheese at its maximum deliciousness! However, if needed refrigerating properly and reheating should be fine!
These are delicious! The first time I cut the slices of bacon in half, opposite way you did (I misread the directions and consulted the pictures after, lol). My bacon wasn’t as crisp. The second time I cut the pieces I half long ways and the bacon browned up. Yummy!

these bacon wrapped stuffed dates are so delicious I had them in a restaurant as an expensive appitizer they were stuffed with Feta cheese but I did them with goat cheese and I liked it better.

Did you use herbed goat cheese, or plain?
I’ve bacon wrapped so many different things. One thing I do to make the bacon crisper is precook it some before hand. Also the cheese doesn’t breakdown and melt so.
