We went in search of a holiday dessert recipe to impress our friends and fam and found the perfect Thanksgiving dessert: maple pecan mug cake! This recipe is not only incredibly quick and easy, but amazingly delicious as well. It’s simple enough to whip up a serving for just two, or to double or triple for your Friendsgiving festivities. Ingredients
(Makes 1-2 servings depending on the size of mug)
- 7 tablespoons yellow cake mix
- 3 tablespoons softened coconut oil
- 1/2 an egg (lightly beaten)
- 1/4 cup chopped pecans
- Non-stick cooking spray
- Grade A maple syrup
- Whipped cream
- Brown sugar
Directions
- Combine cake mix, coconut oil, and egg in a bowl, mix well, then fold in chopped pecans.
- Spray the inside of a microwave-safe coffee mug with non-stick cooking spray, and fill 3/4 of the way full with batter.
- Microwave on high for 3 minutes then check the center of the cake with a toothpick. If the toothpick comes out clean then the cake is done, otherwise microwave cake in 30-second intervals until fully cooked.
- Let the cake cool for 1-2 minutes, then top with whipped cream, a drizzle of maple syrup, and a sprinkle of brown sugar! Serve immediately and enjoy!
