Baked Potatoes with Caviar

Ingredients:

1 pound small creamer potatoes
Olive oil
Salt and pepper
2 tablespoon chives, finely chopped
100g Caviar
8 oz Crème fraîche

Instructions:

  1. Preheat oven to 425°F. Place potatoes on a baking sheet, drizzle with olive oil, salt and pepper to taste.
  2. Cover with tin foil and bake for 45 minutes, remove tin foil and bake for another 15 minutes.
  3. Remove from oven and let cool for 5 minutes. Cut a cross in the center of each potato and push the sides of each potato to loosen the flesh of the potatoes.
  4. Add crème fraîche and let melt into the center.
  5. Before serving, add a dollop of caviar and chives to each potato.
