Thanksgiving and Friendsgiving are all about friends, family, and food, and I know just what holiday appetizer you should make! It’s easy, quick, and delicious. Introducing: Cranberry Brie Puff Pastry Bites!

I think we’ve all seen those big wedges of brie on Pinterest. They’re usually wrapped in puff pastry, they’re oozing cheese, and they sometimes have some sort of preserves (apricot, cranberry, or even raspberry!). I modeled this recipe after that type of brie appetizer, but I made them individual. It’s the perfect way to make and enjoy appetizers!

Plus, this brie puff pastry has all sorts of yummy components: flaky, golden pastry, sweet cranberry sauce, and plenty of gooey cheese! It’s the perfect holiday appetizer. You can, of course, use any recipe you like for homemade cranberry sauce if you’d like to swap that in for store-bought cranberry sauce.  The important part is that you make and enjoy these little golden brown bites of deliciousness.

Cranberry Brie Puff Pastry:

Prep time: 55 minutes

Yields: 12 servings

Ingredients:

  • One 14oz can of whole cranberry sauce
  • One sheet frozen puff pastry
  • 10 ounces brie
  • 1 large egg
  • Fresh rosemary for garnish, if desired

Instructions:

  1. Thaw the puff pastry according to the directions on the package.
  2. Preheat your oven to 375 degrees F. Spray a muffin tin well with nonstick spray.
  3. Slice the top layer of rind off the brie.
  4. Open the can of cranberry sauce and give it a good stir.
  5. Beat the egg in a small bowl–this will be your egg wash.
  6. Lightly flour your counter. Unfold the sheet of thawed puff pastry and roll it larger, until it’s about 14 inches by 12 inches.
  7. Slice into 12 equal squares (they don’t need to be perfectly square or perfectly even!) Place one square of puff pastry into each muffin cavity.
  8. Scoop out 1 tablespoon of brie and drop that in the bottom of each puff pastry square.
  9. Top with about 1 and ½ tbsp of cranberry sauce.
  10. Brush the beaten egg over the exposed puff pastry.
  11. Bake the puff pastry bites for 21-23 minutes.
  12. Let cool in the pan for a few minutes, then loosen them with a butter knife to get them out.
  13. Enjoy immediately! These are best on the first day, but leftovers can be stored in an airtight container in the fridge for a few days.
