Start by making a rosemary simple syrup. Simple syrup may sound like a fancy thing that only bartenders can whip up out of thin air, but I’m going to let you in on a little secret. It’s so easy to make your own simple syrup at home.

Simply combine sugar and water, and in this case a few sprigs of fresh rosemary, and cook in a saucepan just until the sugar is dissolved. Discard the rosemary sprigs–the flavor is now infused into the simple syrup. And if you don’t love rosemary, thyme or mint would be a good swap here.

Once the syrup has chilled in the fridge, you can add it to your cocktail. Bonus: The leftover simple syrup can be stored and used in other drinks later! Combine that simple syrup you just whipped up with ice, grapefruit juice, and gin in a drink shaker. You can simply add ice to your glasses (or chill them) if you don’t have a drink shaker. Pour your cocktail into glasses and top with tonic water, a grapefruit wedge, and a sprig of rosemary.

Ingredients

Rosemary Simple Syrup:

  • ½ cup granulated sugar
  • ½ cup water
  • 2-3 sprigs fresh rosemary

Grapefruit & Rosemary Gin & Tonics

  • 9 ounces grapefruit juice
  • 3 ounces gin
  • 3-6 ounces of the rosemary simple syrup
  • Tonic water
  • Grapefruit slices and fresh rosemary, for garnish
