I don’t know about you guys, but I grew up with a superstar of a mom: a mom who, in her lifetime, probably made me about 100,000 sandwiches. Yes, I was that kid whose mom made them lunch well into high school (Yes, I am embarrassing myself right now, too). So this year, I thought it would be a great idea to return the favor with a delicious Mother’s Day sandwich that’s also super healthy!
When I think of Mother’s Day, I think of tea parties, tiny finger sandwiches, brunch, and all that, but let’s be real: The OG cucumber sandwich could use a serious update. Follow these steps to make your mom (or yourself, or your really great dad…) one of my all-time favorite sandwiches and show her that those years of cutting off your crusts were worth it–and appreciated!
Veggie Sandwich Recipe
Ingredients:
- 4 slices of really good bread. I like to get rye loaves from our local baker, but any hearty bread (or bagel!) will do
- Hummus
- Cream Cheese spread (I love the alternatives that are made with almond milk, herbs, and chives, but any of your favorite cream cheese will do)
- Stone ground mustard
- 1/2 perfectly ripe avocado
- 1/2 Thinly sliced red onion
- 1/2 Thinly sliced cucumber
- 1/2 thinly sliced tomato
- Sprouts or micro greens
- Pickles
- Salt and pepper
Instructions:
- Lightly toast your bread.
- On one side spread a thick layer of hummus, and on the other side, the cream cheese spread.
- Add your mustard to the hummus side, then layer on the avocado slices, tomato, then cucumbers, pickles, onion, and top with the micro greens.
- Give it all a heavy sprinkle of salt and pepper and top with your cream cheese-covered slice of bread for the most wonderful, salty, satisfying veggie sandwich of your life!
