If all these spring showers are killing your vibe, whip up some of this easy sweet potato detox soup and enter warm, cozy (but super healthy) heaven. The inspiration for this dish came from reading way too much good stuff about the health benefits of sweet potatoes–as well as my recent acquisition of a Vitamix and the need to blend absolutely everything in my fridge.

A good blender will take this soup from creamy and amazing and delicious to straight up golden velvet, but honestly, any old blender or food processor will get the job done. I also love this easy sweet potato soup because it’s super filling, serves two, and reheats like a dream. You don’t even notice that it’s loaded with anti-inflammatory goods like turmeric and garlic!

  • Vegan Sweet Potato Soup

Ingredients

Ingredients:

1 sweet potato

1/3 red onion

2 tbs avocado or olive oil

1 tsp pink salt

Fresh cracked pepper

1 tsp cumin

1/2 tbs chopped garlic

1 tsp favorite chipotle hot sauce

1/4 tsp turmeric

1-3 cups veggie broth

Directions

Step 1:

To begin, scrub and peel your sweet potato, then dice the potato and onion and add them to a sauté pan.

Step 2:

Add all your remaining ingredients (except the veggie broth) and cook on medium high until the onions become translucent.

Step 3:

Add in 1 cup of veggie broth, then cover and simmer for about 6-10 minutes or until you can pierce the sweet potato easily with a fork.

Step 4:

At this point, you are going to carefully transfer all your cooked ingredients into your high-speed blender and puree until your soup is nice and creamy and rich. The consistency will be super thick which I love most days, but sometimes I will add another 1/2 to 1 cup of veggie broth at this phase if I am looking for something a little lighter.  Give it a final blend, then serve hot and topped with diced avocado, sprouts, or micro greens!
