The Super Bowl is coming up and whether you’re into football or more excited for the commercials, we all know how important the snacks are on game day! And what better way to celebrate than with an epic Mexican Street Corn Dip?

This elote dip is the perfect snack for a crowd: creamy, spicy, cheesy, and it feeds a large group. It truly takes all the flavors of classic Mexican street corn and turns it into the most delicious appetizer.

Just because corn isn’t in season, doesn’t mean you can’t whip up this dip very easily. You just need a few cans of whole kernel corn, garlic, red bell pepper, jalapeño, a handful of spices, cream cheese, sour cream, cotija cheese, and fresh cilantro. (All the flavors of Mexico, basically!)

I like to serve with fresh tortilla chips because they’re great for scooping. That said, you can also serve with warm sliced bread or crackers. Feel free to double the recipe if you have an even larger group!

Mexican Street Corn Dip

Prep time: 10 minutes

Serves: 4-6 people

Ingredients:

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 shallot, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper (about 1/2 cup)
  • 1 jalapeño, diced (about 1/4 cup)
  • 2 15.25 oz cans whole kernel corn
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 4 oz cream cheese, softened
  • 1/4 cup sour cream
  • 3/4 cup cotija cheese, divided
  • 2 teaspoons fresh cilantro, finely chopped
  • Tortilla chips for serving

Instructions:

  1. In a medium skillet, over medium heat, add butter and olive oil.
  2. When butter has melted, add shallot, garlic, red bell pepper and jalapeño. Cook for about 5-8 minutes until veggies are soft.
  3. Add corn to skillet. Season with salt, paprika and ground black pepper.
  4. Add corn dip to a bowl and garnish with remaining 1/4 cup cotija cheese and fresh chopped cilantro. Serve with tortilla chips.
