This easy-to-make Cucumber Mint Mojito is a simple yet delicious cocktail. It’s an elevated twist on the original mojito that is the perfect refresher for these hot summer days. We love the sweetness of the rum mixed with the mellow flavor from the cucumber, a hint of acidity from the lime, and the freshness of the mint. Combined, these flavors make this cocktail a delightfully balanced beverage. Plus, it’s a bonus whenever we can use ingredients from around our home–that way we can save a trip to the grocery store, and during these times we’re more than okay with that!
To make this yummy twist on a classic, all you have to do is muddle together cucumber, mint, sugar, and lime juice in a cocktail shaker. Then add rum and ice and shake until your shaker is cold to the touch. Strain into two glasses over ice, and top with a splash of club soda. Don’t forget some cucumber and mint as garnish!
One interesting fact to ponder while you’re sipping on your cocktail is the word mojito comes from the African word “mojo” meaning magic charm. Ingredients
- 1/4 cup cucumber chunks
- 8 mint leaves, plus more for garnish
- 2 tsp sugar
- Juice of a small lime
- 3 oz white rum
- Club soda
Directions
Step 1:
Add cucumber, mint, sugar and lime juice to a cocktail shaker and muddle gently.
Step 2:
Add rum and ice and shake vigorously until the cocktail shaker is chilled.
Step 3:
Strain into two glasses over fresh ice and top with a splash of club soda.
Step 4:
Garnish with cucumber and a sprig of mint.
