Ingredients

1 cup freshly squeezed lemon juice
4 cups sparkling water
4 ripe yellow peaches
2 cups vodka
1 cup water
1 cup sugar
Ice
Mint (optional)

Directions

Step 1:

Combine the water and sugar in a saucepan over medium heat and simmer until sugar is dissolved. Set aside to cool completely.

Step 2:

Peel 2 of the peaches with a potato peeler. Remove the pits and then cut them into 1″ cubes to puree in a blender or food processor until liquefied.

Step 3:

Leaving the skins on, cut the remaining two peaches into thin slices.

Step 4:

Combine and stir the lemon juice, sparkling water, vodka, simple syrup, and peach puree into a pitcher. Add a few cups of ice and the remaining sliced peaches. Stir until mixed, garnish with fresh mint, and serve immediately!
