Pumpkin Bars with Cream Cheese Frosting

Ingredients:

  • 1 can pumpkin
  • 4 eggs
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon, ground
  • 2 cup Flour
  • 1 tsp Salt
  • 1 2/3 cup Sugar
  • 1 tsp vanilla
  • 1 cup canola oil
  • 1/4 cup butter

Frosting: 

  • 1 package cream cheese
  • 1/2 package powdered sugar

Instructions:

1. Preheat the oven to 350 F. Using a bowl and mixer, beat together the eggs, sugar, oil, and pumpkin on medium speed for about two minutes. Scrape down the sides as you go.

2. Thoroughly Mix together all dry ingredients and then slowly combine to wet pumpkin ingredients

3. Lightly spray your cake pan. Then pour the fully mixed mixture into the pan and bake for 28-30 minutes at 350 degrees or until a toothpick inserted comes out clean

Cream cheese frosting:

4. Add 8 oz room temperature cream cheese to a bowl. Using  a hand mixer, mix for about two minutes until fluffy . Once mixed well, add 1 cup powdered sugar and splash of vanilla and continue mixing until fully whipped. Do not chill if using right away.

5. Once the cake is fully cooled, add a full layer of frosting to the top. Cut and serve! Garnish with a sprinkle of cinnamon sugar .
