
Berries and cream are the perfect summer treat, and this version is no exception. It’s made with a simple, but delicious, sugar cookie base, and filled with fresh berries and a creamy cream cheese filling. Sweet, light, and easy to make, this is the perfect red, white, and blue dessert to whip up for Memorial Day celebrations!
Berries and cream sugar cookie cups are one of those desserts that fall into the “looks super impressive but is secretly a breeze to make” category. Cookie cups sound fancy, but all you need to make them is a cupcake pan or muffin pan.
Just start with an easy sugar cookie dough, and press it into your pan. Bake, then smush the middles down a bit with the end of a spoon so you have room to add filling. Mix up a quick cream cheese filling and dollop it into the cooled cookie cups. (Tip: If you want to make these look extra impressive, you can pipe the filling in using a star tip. Ooh! So fancy!)
Top these cute treats off with fresh berries–I used strawberries, blueberries, and blackberries. Add a sprig of fresh mint, then watch these fly off the plate wherever you take them! Note: I made the recipe in a slightly smaller batch, so it yields 12 cookie cups. You can double the recipe if you’d like 24 servings, or cut it in half if you’d like just six servings. I highly recommend doubling it, because these are dangerously delicious!

Ingredients
Cookie Dough:
- 1/2 cup salted butter, softened at room temp
- ½ cup granulated sugar
- ¼ cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 and ⅓ cups all-purpose flour
- ½ tsp baking soda
- Pinch of salt
Cream Cheese Filling:
- 10 ounces cream cheese
- 1 and 1/2 cups powdered sugar
- 1 tsp vanilla
For Serving:
- Fresh berries
- Fresh mint
Directions
Prep:
- Preheat your oven to 350 degrees F.
- Spray your cupcake or muffin tin with nonstick spray.
Make the Cookie Dough:
- Cream softened butter in a medium mixing bowl until creamy.
- Add sugars and mix until well creamed, at least 1 minute.
- Add egg and vanilla and mix until just combined.
- Add the dry ingredients and mix until a dough forms.
Bake:
- Add about 2 tbsp of dough to each muffin tin. Press into the bottom and up the sides to form a cup.
- Bake for 9-10 minutes. The bottoms will look a bit raised and puckered, that’s normal. Once they’re out of the oven, use the end of a spoon to push down the centers. Let them cool in the pan and then remove (use a knife to loosen).
Make the Filling:
- Beat together the cream cheese, powdered sugar, and vanilla until creamy. Add a splash of milk or heavy cream if you have it on hand.
- Taste and adjust the sweetness if desired by adding a bit more powdered sugar.
Fill and Decorate:
- Dollop or pipe the filling into the cooled cookie cups. Top with fresh berries and a sprig of mint. Enjoy!
(Store leftovers in an airtight container in the fridge for 3-4 days. If making ahead, store in the fridge in an airtight container and let sit at room temp a bit before serving.)
