I love this time of year because I think it’s always a good idea to celebrate love, whether that is self love, significant other love, bestie love, dog love… it’s a perfect chance to go the extra mile for someone sweet in your life. And I really LOVE these yogurt-dipped berries because they are a delicious, frozen treat and a lightened up version of the chocolate covered strawberries we all know. But honestly, my favorite part about this dessert is that if you have leftover dipped berries, you can just throw them a giant freezer bag and just like that you have little yogurt berry bombs to add to any smoothie you make for the next week!

Ingredients
For the Berries:
2 cups honey Greek yogurt (you can use plain, just add a tablespoon or so of honey!)
1 cup powdered sugar
1 carton strawberries
1 package cooked and peeled beets (for a natural pink coloring, optional)
Red food coloring (optional)
Directions
Step 1
Simply mix the yogurt and powdered sugar together in a large mixing bowl (try not to eat it all at this point… but feel free to give it a few taste tests along the way). If you are going to do some pink dipped berries, divide this mixture into two bowls, and in one bowl add a few drops of juice from your beets (or you could use a couple drops of red food coloring to achieve a brighter pink color).
Step 2
Rinse and really DRY your fresh berries before giving them a dunk in your yogurt bowl, then move to parchment paper. Continue until all berries are dunked.
Step 3
Pop these guys in the freezer for 30 minutes to an hour, then remove them and give them a second coating! The is key because they will make the berries look super yummy, evenly coated, and glossy. Plus, you get more of a sweet cream coating on the outside which is kind of the best part once they are frozen again.
Step 4
Once dipped, you can sprinkle them with chopped nuts, sprinkles, or sparkling sugar like I did, then pop these guys back in the freezer until after dinner. Be sure to set them out a good 5-10 minutes before eating because the berries will be pretty frozen solid.
