The warm weather is beckoning us to sit outside and enjoy a meal on the patio, and Father’s Day is right around the corner–both perfect brunching occasions. Not to mention, the ideal excuse to try this Strawberry French Toast Bake recipe. Of course, is there any day that sounds like a bad idea? Mm, not really.

Strawberry French Toast Bake is a lovely brunch option in my opinion. It’s also pretty simple: You can assemble it the night before in about 15 minutes, using pretty basic ingredients. Cover it, pop it in the fridge, and bake it up in the morning! No, really–it’s that easy. You can also swap in whatever berries you have on hand for this French toast casserole: If you have blueberries or blackberries instead, go ahead and use those! You can also substitute non-dairy milk if you need to.

The most important part of this recipe is making sure the bread has enough time to soak up all the liquid before you bake the casserole. The second most important part is serving this dish with lots of maple syrup (naturally)!

Ingredients

8 ounces bread (I used Challah; French would work well too. Cut your bread into 1-inch cubes and let it sit out for a day to get a little stale. It’s best that way!)

1 cup strawberries, sliced

4 eggs

1 cup milk

1 Tbsp vanilla extract

½ tsp cinnamon

¼ tsp nutmeg

Pinch salt

⅓ cup granulated sugar

For Topping:

Powdered sugar

Maple Syrup

Butter

Directions

Assemble:

  • Spray an 8×8 baking dish with nonstick spray.
  • Add half your cubed bread, then half the strawberries. Repeat with remaining bread and strawberries.
  • Whisk together the eggs, milk, vanilla, spices, salt, and sugar. Pour this evenly over the top of the bread in the pan–a glass measuring cup with a spout works best for this–so that each piece of bread gets hit with some of the liquid.

Rest:

Cover the French Toast Bake tightly and chill in the fridge for at least three hours or up to overnight. This is imperative so that the bread can soak up the liquid–do NOT skip this step!

Bake:

Bake French toast casserole at 350 degrees F for 40-45 minutes. The bread poking out on top should be a bit crisp, and you shouldn’t be able to detect any liquid in the pan anymore.

Serve + Store:

Serve warm with maple syrup and powdered sugar! Store leftovers well-covered in the fridge for 3-4 days.
