Mother’s Day Cupcakes

Ingredients:

For the cupcakes:

  • 1/2 cup unsalted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup milk

For the frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups confectioners’ sugar
  • 1 1/2 teaspoon milk
  • 1/2 teaspoon vanilla extract
  • Blush pink food coloring

For decorating:

  • Piping bag
  • Wilton 104 piping tip

Instructions:

1. Line the cupcake pan with liners or grease pan with butter and lightly dust with flour.

2. Melt butter and add eggs one at a time, then stir in vanilla.

3. In another bowl, sift together flour, baking powder, baking soda, cocoa powder, sugar, and salt, and add flour mixture with milk to the butter mixture.

4. Preheat oven at 350 degrees F. Fill cupcake cups 1/2 full and bake for 15-17 minutes or until the toothpick inserted into the cupcakes comes out clean.

5. Remove from oven and let cool for a few minutes before transferring to a wire rack. Allow cupcakes to cool completely before frosting.

For the frosting:

6. Combine butter and sugar and beat with an electric mixer until blended. Add the milk, vanilla and beat for 5 minutes or until it reaches a smooth and creamy consistency.

7. Add a few drops of blush pink food coloring and mix well into the frosting.

8. Use an offset spatula to spoon frosting into the piping bag.

To pipe roses:

9. Pipe in a circular motion starting in the center of the cupcake. Create petals by piping frosting in a semi-circle motion (similar to the shape of a rainbow) from left to right. Continue piping until the cupcake is completely covered.

10.  Serve at room temperature. Enjoy!
