
It’s hard to believe, but it’s time to start thinking about New Year’s Eve again–and not just your outfit, but your menu, too! So in the spirit of celebration, may I suggest this bubbly bit of goodness? Champagne floats are the easiest New Year’s drinks you can possibly make, and they’re also incredibly delicious and festive. Not to mention, these cocktails basically double as dessert since there’s sorbet. Need I say more?

The formula for these champagne floats is super simple: Just pour chilled champagne or sparkling juice over your favorite sorbet flavor. Then, add in some fresh raspberries and maybe a sprig of mint for that extra-fancy feel. I used raspberry sorbet and sparkling rosé for the drinks pictured here–it was an incredible combination!
This recipe can be easily scaled up or down to make the number of drinks needed. The recipe can also be adjusted to fit your preferences; swap in any type of sorbet or fresh fruit you like, matching it to the flavor of champagne or sparkling juice that you prefer.

As written, this recipe yields four drinks, but you can easily adjust it to fit your needs. I think a blueberry sparkling juice or your favorite variety of champagne would be delicious with the raspberry sorbet, too. You could even toss in a handful of fresh blueberries for a pretty garnish, as well. It’s a complete make-it-your-own situation with these champagne floats so, well, make them your own! Ingredients
- 1 bottle of your favorite Champagne or sparkling juice, chilled (I used Sparkling Rosé)
- 1 pint fresh raspberries, rinsed and gently patted dry
- 1 tub Raspberry Sorbet
- Fresh mint, for garnish
Directions
Step1:
Add a scoop or two of raspberry sorbet to each glass. Add a few fresh raspberries.
Step 2:
Pour the champagne or sparkling juice over the sorbet in each glass. Garnish with fresh mint if desired. Serve immediately!
