The first time I made these oatmeal chocolate chip cookie dough bites, I was thinking I would end up with something pretty healthy and granola-like. The ingredient list was so short, clean, and simple that I wasn’t even thinking of them as cookies, but more as a healthier little snack to cure my chocolate/peanut butter cravings. One taste of this dough straight from the blender and I knew I had stumbled upon something magic: Then I popped them in the freezer overnight and they turned truly special.
If you love oatmeal chocolate chip cookies, drop what you’re doing and go mix up a batch of these no-bake chocolate oatmeal balls. They don’t require an oven, which is perfect for summertime. Plus, they’re vegan, gluten-free, and come together in under 10 minutes!

Ingredients
Ingredients:
1 3/4 cup quick oats
1/4 cup flax seed
1/4 cup almond meal
1/2 cup peanut butter
1/2 cup maple syrup
1 tsp vanilla
1 Tbs almond milk
1/3 cup vegan (optional) dark chocolate chips
1/4 cup Cacao nibs
1/2 tsp sea salt
Directions
Step 1:
Add your oats, flax, almond meal, peanut butter, maple syrup, vanilla, and almond milk to a high-speed blender or food processor and pulse a few times to get things moving. (I used a tamper to scrape down the sides of my blender as I whirled everything into a thick, sweet, and sticky dough.)
Step 2:
Taste here and add a sprinkle of sea salt or cinnamon if you think it needs it before stirring in the chocolate chips and cacao nibs.
Step 3:
At this point, the dough should come together easily–scoop and roll into 1 tbsp-sized balls before popping these guys in your fridge or freezer.
Step 4:
Chill for at least 30 minutes (after you obviously eat one fresh one because they are already so good) and enjoy! These keep best in an airtight container in your freezer and can be thawed or eaten straight from the icebox!
