These Berries and Cream Parfaits are light, decadent, and the perfect red, white, and blue dessert! Plus, the only part that you have to make is the whipped cream–and don’t skip that, either: Homemade whipped cream takes just a few minutes to whip up, and it’s light, creamy, dreamy, and has just the perfect hint of sweetness.
These desserts are like the no-bake cousin of Strawberry Shortcakes! Instead of biscuits, though, we’re layering cubes of pound cake or angel food cake in the bottom of our parfaits, then adding layers of our fresh whipped cream, blueberries, and strawberries. (Hence, the red, white, and blue dessert part.) It’s important to let the strawberries sit in a bowl with the tablespoon of sugar while you make the whipped cream; this helps the strawberry juices get going and takes this July 4th dessert recipe up a notch!

Ingredients
- ½ of a pre-made pound cake or angel food cake
- 1 ½ cups fresh strawberries
- 1 Tbsp granulated sugar
- 1 pint fresh blueberries
- 1 1/2 cups cold heavy cream
- ⅓ cup powdered sugar
- 2 tsp vanilla extract
Directions
Prep:
Rinse and dry the strawberries. Slice the tops off and quarter them. Place the strawberries in a bowl and toss with 1 Tbsp granulated sugar. Rinse and dry the blueberries. Cut up the cake into small cubes.
Make the Whipped Cream:
Add the cold heavy cream straight from the fridge to a large mixing bowl, and add the powdered sugar and vanilla. Beat on high speed with an electric mixer until stiff peaks form (check this by turning off the mixer and lifting the beaters straight out of the bowl – stiff peaks should form and hold). Once it reaches this point, don’t overmix! You can deflate the whipped cream by overmixing it.
Assemble:
Layer the cake, whipped cream, and berries in small glasses. I layered in this order – cake, whipped cream, blueberries, whipped cream, strawberries, and a dollop of whipped cream on top. Enjoy immediately! These are best served fresh.
